Tomahawk Steak What Part?

The longissimus dorsi, also known as the loin of the steer, is where the majority of the meat for the tomahawk steak comes from. This region is known for producing steaks that are heavily marbled, exceptionally soft, and full of flavor. This structure is made up of two muscles that are located outside of the steer’s rib cage and run parallel to both sides of the spine.
