To probe a brisket, start directly in the heart of the densest section of the flat and work your way outward. Insert the thermometer horizontally and at an angle across the grain of the grain of the grain. Because of the amount of fat and connective tissue in the point, it will not provide as accurate a reading.

Where do you place your grill probe?

My preferred method is to insert my probe into the thickest section of the flat and into the side of the brisket. That way, I can be sure I’m not going too deep or too shallow.
