Test your steaks again after closing the cover and cooking for another 1 or 2 minutes, if required, before closing the lid. If they have achieved the temperature you wish, remove them from the grill immediately. Cook rare steaks at 120 to 125 degrees Fahrenheit, medium-rare steaks at 125 to 130 degrees Fahrenheit, and medium steaks at 130 to 135 degrees Fahrenheit.
